They say necessity is the mother of invention. That may be true, but I’m inclined to believe that laziness is just as powerful a motivator. Take the inventor of the wheel. Nobody needs a wheel. Oh no. No, I’m betting that the wheel was invented by some paleolithic paragon of laziness, who was so idle that they couldn’t even be bothered to carry things around with their own two hands and decided to seek out a better way. Ditto Archimedes, who so could-not-be-bothered to transport water around that he invented an ingenious and very elaborate screw to do the job for him instead. No wonder he went around shouting ‘Eureka!’. That is the exclamation of a man who has spent his life not wanting to do things, and coming up with inventions so he doesn’t ever have to.

That’s what I think anyway. And the reason that I am sharing these pearls of wisdom with you is because I’m quite keen to convince you that being lazy is something noble and profound. You see, I’m about to share a story about my own laziness, and without that preamble I’d fear you would think I was just… well, just plain lazy.

Gluten Free Pita Bread

It’s funny how some recipes come about. This one was born of blinding, ravenous hunger. Admittedly not the real, haven’t-eaten-for-days type hunger. But the sort of hunger that makes you want to weep when you wake up in the morning and realise your fridge is empty. The sort of hunger that won’t even let you contemplate going to the corner shop to buy supplies (how can you afford to waste minutes going to the shop when you absolutely must eat now?!). And the worst thing about this particular episode was that there was food in the house. There was a giant loaf of delicious crusty white bread just begging to be eaten. But it wasn’t gluten free and so while K was salivating over it, I was experiencing escalating levels of panic about my breakfast options.

Sometimes you need limitations to be creative. In my day job coming up with ideas for new TV programmes, it’s often the most restrictive briefs that lead to the most original ideas. And it was a bit like that when I stopped eating gluten. In the weeks and months after I banished gluten from my diet (and threw away my beloved sourdough starter…sob!) I actually found myself being more creative than ever in the kitchen.
